Spice is a trademark for Mexican cooking so in preparing your ingredients, peppers are essential. You will need three kinds of pepper; one red and one yellow bell pepper both seeded and cut into strips and one seeded and chopped jalapeno. You will also need two tablespoons of extra virgin olive oil, two sliced yellow onions, half a teaspoon of sea salt, a teaspoon of ground black pepper, five halves of fajita spice mix, and half a tablespoon of chili powder. For the main ingredients you will need four whole chicken breasts. Both skin and bones should be removed and the breasts cut into strips of 0.5" by 2". You will also need 1 pkg. fresh, lg. flour tortillas. For the toppings you will need grated Monterey jack cheese, diced avocado, salsa, arugula and sour cream.

Begin by putting the chicken strips and a tablespoon of the spice mix in a glass bowl. Then coat the strips with the mix. Now prepare a large skillet by adding in olive oil and setting the fire to medium-high heat. Then add the coated chicken strips and sauté for four minutes. Next put in the yellow onions and the two bell peppers and stir fry for a couple more minutes. Set the heat to high and put in the rest of the spice mix along with the jalapeno, chili powder, and black pepper. Stir and then turn down the heat to low. Cover the skillet and simmer the ingredients for five minutes.

While simmering the strip mixture, prepare the tortillas by wrapping them in foil and placing them in the oven. Set the temperature to 350 degrees and the timer to ten minutes. For the finishing touches place a quarter cup of the strip mixture in the center of the tortilla. Add any additional spices or seasonings you want and then arrange the dish to look like a burrito.
